One of the restaurant’s signature offerings is the Dry-Aged Peking Duck Two Way, a classic Chinese specialty recognized among Singapore’s best. The duck is marinated with a delicate blend of sugar, wíne, and water to achieve tender meat and crisp, golden skin, then dry-aged for a week before being cooked using custom-designed equipment that ensures consistency and control. 18 Jade’s menu also features shark’s fin, along with a selection of premium seafood and wok-fried dishes, each prepared using time-honored Chinese cooking methods.
